Outdoor Edibles – Dutch Oven BBQ Chicken Pizza on Beer Bread Crust

Dough

  • 3 cups flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 12 oz beer
  • olive oil
  • 1 tbsp sugar

Toppings

  • Chicken breast
  • Bacon
  • Chopped Pineapple
  • BBQ sauce
  • Lots of Cheese
 
Start your coals so they have time to warm up really well.  While thats heating up, start making your dough for the crust.  First combine your dry ingredients and mix well.  Mix in beer and knead until its clumped together to one giant ball that is sticky.  Set aside in a bowl and cover with a warm wet towel.  By now your coals should be ready.  Place your dutch oven on top of 12-15 coals and line the bottom of the oven with bacon.  The bacon grease will help also help season your oven.  Place the chicken breasts on top of the bacon and let it all cook together.  Once the bacon becomes crispy and the chicken is done pull it all out of the dutch oven and set aside to cool a bit.  Take your dough and cut it half.  Flatten out one dough ball so that it fills the bottom of the dutch oven.  With 6 coals on the bottom and 12 on the lid, place the crust in the oven and let bake for about 10 min before flipping the crust over.  While the crust is cooking, pull the chicken apart into small pieces and chop the bacon.  Once you flip the crust, add the BBQ sauce, chicken, bacon, pineapple and cheese and place the lid back on top.  Everything should already be cooked so now you’re just waiting for the cheese to melt.  In about 5 minutes, the cheese should be finished.  Scoop the pizza out and place on a cutting board, slice and enjoy!  While you’re enjoying your dutch oven pizza, go ahead and cook a second pizza using the other ball of dough.  Or if you’re just cooking for 2, save the ball of dough, and other ingredients in your fridge for enjoyment in the future.
